Sticky Mannabrew BBQ Pork Ribs

These sticky MannaBrew BBQ pork ribs are bold, smoky, and properly finger-licking good. The ribs are coated in a rich, roasted spice rub, slow-roasted in wine, stock, and strongly brewed MannaBrew until meltingly tender, then finished with a thick, sweet-and-spicy coffee-style BBQ sauce. A quick blast under the grill (or over medium heat) caramelizes everything into a dark, glossy glaze with just the right char. Messy? Yes. Worth it? Absolutely.

Spice Rub

  • 30 ml (2 tbsp) MannaBrew powder
  • 30 ml (2 tbsp) brown sugar
  • 10 ml (2 tsp) smoked paprika
  • 10 ml (2 tsp) ground fennel
  • 10 ml (2 tsp) garlic powder
  • 10 ml (2 tsp) onion powder
  • 5 ml (1 tsp) ground black pepper
  • Zest of ½ lemon

Ribs

  • 1 rack (500 g) pork ribs
  • 125 ml (½ cup) red wine
  • 125 ml (½ cup) beef stock
  • 125 ml (½ cup) MannaBrew, strongly brewed
  • 1 medium onion (100 g), chopped
  • 1 medium carrot (100 g), chopped
  • 3 garlic cloves, chopped
  • 4 sprigs fresh thyme

BBQ Sauce

  • 125 ml (½ cup) tomato puree
  • 250 ml (1 cup) MannaBrew, strongly brewed
  • 60 ml (¼ cup) brown sugar
  • 60 ml (¼ cup) apple cider vinegar
  • 30 ml (2 tbsp) honey
  • 10 ml (2 tsp) Worcestershire sauce
  • 2 garlic cloves, finely chopped
  • 5 ml (1 tsp) salt
  • 5 ml (1 tsp) ground black pepper
  • 5 ml (1 tsp) onion powder
  • 5 ml (1 tsp) garlic powder
  • 5 ml (1 tsp) mustard powder
  • 5 ml (1 tsp) cayenne pepper

  1. Spice Rub & Marinating: Mix all spice rub ingredients together in a bowl. Season the pork ribs generously with the rub, ensuring an even coating on all sides. Cover and refrigerate for 1 hour.
  2. Preheat Oven: Preheat your oven to 200°C.
  3. Braising Liquid: Combine the red wine, beef stock, strongly brewed MannaBrew, chopped onion, carrot, garlic, and thyme in a deep roasting dish.
  4. Slow Roasting: Place the marinated ribs into the roasting dish liquid. Cover tightly with foil and roast in the oven for 2 to 3 hours, or until fork-tender.
  5. Drain Meat: Carefully remove the ribs from the braising liquid and drain on paper towels. Turn your oven setting to grill.
  6. BBQ Sauce: Place the tomato puree in a saucepan over medium heat and cook for 2 minutes, stirring continuously. Add all the remaining BBQ sauce ingredients and simmer for 8 to 10 minutes until the sauce thickens to a glossy consistency.
  7. Glazing & Charring: Brush the ribs generously on both sides with the MannaBrew BBQ sauce. Place under the grill for 4 to 6 minutes per side until lightly charred and sticky.
  8. Serve: Slice the ribs into portions and serve piping hot with crispy fries or a fresh side salad.

💡 TIP: Instead of using the oven grill, brush the tender ribs generously with sauce and caramelize them over medium heat on the braai (BBQ) for 4 to 5 minutes per side until sticky and lightly charred.
