Ingredients

Mousse Base

  • 400 g sweet potato, cooked, peeled, and mashed
  • 240 ml coconut cream
  • 125 ml MannaBrew, strongly brewed
  • 60 g (6 tbsp) raw cacao powder
  • 60 ml (4 tbsp) pure maple syrup
  • 10 ml (2 tsp) vanilla extract
  • 1 pinch fine pink Himalayan salt

To Serve (Optional)

  • Whipped coconut cream
  • Dark chocolate shavings
  • Fresh edible flowers

Instructions

  1. Bake Sweet Potatoes: Preheat oven to 180°C. Prick whole sweet potatoes multiple times with a fork. Place on a baking tray and bake for approx. 90 minutes until completely tender throughout. Allow to cool completely, then peel off the skins.
  2. Blend Mousse: Measure 400 g of the cooled sweet potato flesh and add to a large bowl (or food processor) along with the coconut cream, 125 ml of strong MannaBrew, cacao powder, maple syrup, vanilla extract, and pink Himalayan salt.
  3. Emulsify: Using an immersion hand blender (or high-speed food processor), blend thoroughly until the mixture becomes silky, smooth, and completely creamy.
  4. Assemble & Chill: Scoop or pipe the mousse into individual serving glasses. Refrigerate for at least 1 hour to set.
  5. Garnish & Serve: Before serving, top each glass with a dollop of coconut cream, dark chocolate shavings, and edible flowers.
