Ingredients

For the Chia Pudding Base

  • 500 ml MannaBrew, strongly brewed and cooled

  • 500 ml coconut milk (or almond milk)

  • 120 g chia seeds

  • 20 ml (4 tsp) pure maple syrup or honey

  • 10 ml (2 tsp) vanilla extract

  • 1 pinch fine salt

For Assembly

  • 375 g Greek yogurt (or coconut yogurt for a dairy-free option)

  • 100 g granola (homemade or store-bought)

  • 225 g mixed berries (fresh or frozen)

  • 20 ml MannaBrew syrup or honey (for drizzling)

Instructions

  1. Mix Base: In a large bowl, whisk together the 500 ml of cooled MannaBrew, coconut milk, chia seeds, maple syrup (or honey), vanilla extract, and salt. Whisk vigorously for 1 minute to ensure chia seeds are evenly distributed without clumping.

  2. Set Pudding: Let the mixture sit at room temperature for 10–15 minutes, then whisk again. Cover the bowl and refrigerate for at least 2 hours (or overnight) until the chia seeds absorb the liquid and form a thick, creamy gel texture.

  3. Assemble Parfaits: In four glass jars or dessert glasses, spoon a base layer of the MannaBrew chia pudding. Top with a layer of yogurt, followed by mixed berries and crunchy granola. Repeat the layering once more if space allows.

  4. Finish & Serve: Drizzle the top of each parfait with a touch of honey or MannaBrew syrup and serve chilled immediately.

PREP TIP: These parfaits can be assembled in sealed mason jars up to 3 days in advance (adding the granola just before serving to maintain its crunch).
